Cucumber Ginger Lime Infused Water--Journey for JessiI absolutely love summer and everything about it, right down to the +100° and humid Texas weather.  Summer just makes me crave healthy and fresh foods like infused water (above: cucumber, ginger & lime), raw produce, and salads.  Can you say light and fit foods?  Yummy!  I am such a visual eater, and that aids in “eating the rainbow” to reap all the health benefits from a variety of fruits and veggies.

A couple nights ago, I made a quick salad with tomatoes from the garden, cucumbers  from the garden, shredded carrots, radishes, spring mix, romaine lettuce, an avocado, and a side of dill pickles.  For the dressing, I squeezed fresh lemon juice and olive oil on top.

Something changed a few nights ago, though.  My taste buds seemed to be convinced it was Fall, and I was suddenly craving something warm, sweet, and comforting.  Despite this season switch up, I was determined to satisfy my craving while keeping to my healthy regimen.  I ended up making Cinnamon Honey Granola with a Baked Granny Smith Apple. Like trail mixes and nuts, granola ranks pretty high up on my “I will devour the whole bag because I have no self-control” list.  When I confessed this to Jessi a while back, she taught me something that I will forever be grateful for–homemade granola.  Yes, I know,  “Duh, Emily,”  but I just did not realize how easy and fun making granola was!  Jessi and I made tons of granola during our friendship and had bounties of fun along the way.  Sometimes, I had a bit too much fun as evidence, courtesy of Jessi, showed…

Embarrassing? Yes… but our relationship was far beyond caring about embarrassing ourselves.  In summary, granola=easy, cheap, and quite entertaining for a Friday night.  Just see for yourself!

Ingredients

♦ 1 cup of Old-Fashioned Oats

♦ 1 tbs ground cinnamon

♦ ¼ cup honeyCinnamon Honey Granola--Journey for Jessi

That is it!  You can add more or less.  You can be as creative as you desire!

Just pre-heat the oven to 400°F.  Mix all of the ingredients together and bake for about 10 minutes.  It will make about 6 servings.

♦ Keep an eye on your granola because different ovens, elevations, and pans will bake your granola differently.  

♦ Feel free to mix the granola up with a spatula as it is baking to get a more even browning.

I also baked an apple alongside my granola.  Just slice up an apple, sprinkle with cinnamon, and bake to your taste!

Don’t worry, my summer taste buds were back to normal again the next morning!  I had a summer berry (blueberries and strawberries) bowl with unsweetened almond milk and some granola.
