hiking the summer away

hiking the summer away--Journey for JessiOn to the finale of my summer “vacation.”  I say “vacation” because I was vacationing in the colorful state in which I attend school, Colorado.  I am so blessed to call this amazing place my home away from home.  The beauty and wonder never ceases to captivate me.  On the final day in Glenwood Springs, my family and I went off the beaten path to a more than less popular hiking trail, but it did not disappoint by any means!  It was full of gorgeous views of the river and falls and if it were not for the Grizzly Bear encounter (yes, GRIZZLY BEAR!!!), then we would have kept hiking the afternoon.hiking the summer away--Journey for JessiIt all began with an easy hike down the road to the site of the official trail.

hiking the summer away--Journey for JessiThe hike was still beautiful.  Just look at those Aspen Trees–you can tell it’s an Aspen by the way that it is…

hiking the summer away--Journey for JessiThe entirety of our hike was along this river, so the water views were plenty.

hiking the summer away--Journey for JessiThere use to be an old goldmine in the mountains we were hiking, so old remnants were frequent along the trail.

hiking the summer away--Journey for JessiAfter our descent to civilization (almost), we found some more welcoming animals and I had to say hello.  Fun fact about me: I cannot control my laughing whenever I see cows :)  After my family and I got back into town, we were so hungry.  Driving through town, something caught my eye…

hiking the summer away--Journey for JessiThis was a quaint café with delicious food and spectacular customer service.  I aspire to someday own a café like Maud’s.

hiking the summer away--Journey for JessiI ordered the Avocado and Shrimp Salad with the dressing on the side. It was to die for!  I know it seems crazy to say that about a salad, but what can I say?  I am a veggie lover!

hiking the summer away--Journey for JessiSomething else caught my eye as well…

hiking the summer away--Journey for JessiWe had to get dessert to go.  I believe in indulging my sweet tooth from time to time.  I mean, just look at the Chocolate Peanut Butter CakeKey Lime Pie, and Coconut Cream Pie! Yummy Yummy!

hiking the summer away--Journey for JessiWell, that just about sums up my Colorado vacation after driving back into Fort Collins. I am slowly catching up to real time now.  Stay posted for more recipes, meal ideas, and workouts!
