pumpkin protein pie--Journey for Jessi

I know that everyone is busy getting ready for Turkey Day, even pescatarians like me!  The holiday can bring lots of stress instead of enjoyment, so why not alleviate some of that thanksgiving food prep panic and make some items ahead of time–like my Pumpkin Protein Pie for instance.My family usually makes the pies the day before, that way they have time to cool and refrigerate.  (Yes, my family does love their pumpkins pies cold.)  Believe me, I plan on indulging in my mom’s pumpkin pie–full sugar and lactose…it is a holiday after all and I will treat myself.  But, if you have stronger will power than I do, tryout my Pumpkin Protein Pie!

Ingredients:

Crust:

  • 1 box cinnamon Chex
  • 1 can pumpkin purée
  • 1 tsp cinnamon (I use more)
  • 1 tbsp pumpkin pie spice (I use more)
  • ¼ cup applesauce (unsweetened)
  • 1 ¹/3 cup oat flour

Pie Filling:

  • 1 pie pumpkin (or 1 ½ cans of pumpkin)
  • 7 dates
  • ½ cup of whey protein
  • water
  • 2 eggs
  • cinnamon
  • nutmeg
  • pumpkin pie spice
  • ginger

Begin with the crust by mixing the purée, applesauce and spices together.

pumpkin protein pie--Journey for JessiUsing an immersion blender, mash-up the cereal/pumpkin combination to mush.

pumpkin protein pie--Journey for JessiGradually add in the Oat Flour until a doughy texture arises.  If the mixture is still too wet, add in more flour.

pumpkin protein pie--Journey for JessiInto 2 greased pie pans, flatten your dough into the pans.

pumpkin protein pie--Journey for JessiBake at 375° for 12 minutes while you prepare the filling.

With your prepped pie pumpkin (baked, cooled, peeled, and cubed)…

pumpkin protein pie--Journey for JessiMash the pumpkin to your own purée (or just go ahead and scoop it out of a can or two…)

pumpkin protein pie--Journey for JessiAdd in the dates and spies and combine well.

pumpkin protein pie--Journey for JessiMix the whey protein powder according to instructions and mix into the pumpkin along with up to ¹/3 cup of water.  Add it in a little at a time to avoid sloshing…like what I made the mistake of doing…

pumpkin protein pie--Journey for JessiAdd in the eggs, mix well, then fill the cooled pie crusts with the mixture.

pumpkin protein pie--Journey for JessiBake at 350°F for 40 minutes, or until the top looks firm.

pumpkin protein pie--Journey for JessiSlice and top with your favorite whipped topping.  I topped mine with cashew cream!
