home sweet texas--Journey for JessiI took my last final Friday morning.  After a grueling week of being held up in the library and stressing, it was so nice to finally be finished!  Now all that was left was packing and waking up at 3:30 am Saturday morning to catch my flight.  All that was standing between me and Texas was the dreaded packing… oh, how I despise packing… home sweet texas--Journey for JessiI do not know what it is about packing, but I always procrastinate until the very last minute.  Help!

home sweet texas--Journey for JessiI had to make sure I got all of the essentials–Nikes, P90X, workout clothes, etc.  Then, I woke up early and caught my flight!  Before I knew it, I was back in Texas.

home sweet texas--Journey for Jessihome sweet texas--Journey for JessiIt is always a fantastic and much needed reunion with my puppies when I get home.  I miss them so much when I am at school.

home sweet texas--Journey for JessiBecause I came home on Saturday, I got to join my family for “Sushi Saturday!”  Yummy!

home sweet texas--Journey for JessiI ordered a Veggie roll with brown rice and two pieces of Fresh Salmon Sashimi.  Yummy, yummy!  Sushi is probably a big part of why I cannot be a vegetarian–I love fish too much, hence my pescatarianism.

home sweet texas--Journey for JessiThis morning for breakfast, I made Banana Nut Oatmeal with eggnog coffee from the Fresh Market.  I enjoyed my oats while reading Food Network Magazine, it’s one of my favorites, along with Runner’s World and Women’s Health.

♦ 1/3 cup old fashioned oats

♦ 1/3 cup unsweetened almond milk

♦ 1/3 banana

♦ cinnamon

♦ 1 tbsp chopped pecans

After breakfast, there was a mini road trip to none other than Buc-ee’s!

home sweet texas--Journey for JessiIf you must ask, Buc-ee’s is a truck stop/gas station/rest stop/café/convenience store/home goods store/everything you ever wanted on a road trip plus more!  It’s a Texas thing ;)

home sweet texas--Journey for Jessihome sweet texas--Journey for JessiJust a lazy Sunday afternoon, but what are Sundays for?  So nice to be home with family, friends, and my puppies.  What did you do this Sunday?
