cilantro lime rice

cilantro lime rice || Journey for JessiBeing from Texas, the amount of Mexican food consumed during my lifetime is quite substantial.  The only thing that put a halt to all the endless chips and salsa, Freebirds burritos, and sizzling fajitas galore was my decision to attend school in Colorado.  The Mexican food is sub-par here and it is one of the things I crave when I go home.  I still get my fix from time to time with a Chipotle bowl from time to time, but I like to stay away from the fast food.  Up there on my “hard to resist” list?  Chipotle’s Cilantro Lime Rice.

Thank goodness I learned how to make my own!  It is so easy too!  I make a batch of this on my meal-prep Sunday for the week and add things like black beans, shrimp or avocado in the mix.

Ingredients:

♦ 2 c brown rice

♦ bundle of cilantro (to taste)

♦ 1-2 limes

♦ 1 can black beans (if desired)

♦ shrimp (if desired)

♦ diced avocado (if desired)
