day eight | a smoothie & sliders

 week two: day eight | Journey for JessiI woke up this morning still starving from empty refrigerator after having spent three weeks at home in Texas.  I pushed through it though as I knew it was just a matter of a few hours before I hit up the grocery store after the gym.    All morning I just planned out my meals for next week and made my grocery list.  I am trying to be better about meal planning and sticking to my lists.  I did make a smoothie this morning to get me through my workout and shopping.

Coconut Strawberry Banana Smoothie

Ingredients:

  • ½ frozen banana
  • 5 frozen strawberries
  • 8 oz unsweetened coconut milk

Just blend together and enjoy!  I was lucky that I still had some frozen fruit in my freezer and some coconut milk in my pantry, otherwise, I think I would not have made it past my warm-up.

After my workout and grocery shopping (I stuck to my list!), I relaxed at home by reading and taking a quick nap.  For lunch I had left-over brussels sprouts and some rotisserie chicken that I picked up at the store.  I buy organic and free-range rotisserie chicken with no flavoring added.

It is amazing how in tune I am becoming with my body again.  Although my lunch was simple, I could not even finish what was on my plate!  I recognized the feeling of fullness, and stopped eating.  I guess I am leptin responsive again (leptin is a hormone that signals “fullness” to the brain so you stop eating).

Later on in the day I snacked on green grapes and raw almonds.

Finally, dinner time came!  I was so excited because last night I craved a good burger…that’s how hungry I was yesterday.  That is why this morning, I planned for some paleo burgers for dinner tonight!  Yum, yum!

Paleo Beef Sliders

Ingredients:

  • grass-fed, lean ground beef
  • one tomato
  • one head of iceberg lettuce
  • one red onion
  • spices (onion powder, parsley, garlic powder, etc.)

Pre-heat the oven to 350ºF.  In a medium bowl, add the beef along with some spices of your choosing and mix together well.  Form eight patties and place them on a wire rack inside a baking pan.  Bake for 25 minutes for medium rare burgers.

Meanwhile, slice a tomato and red onion into thin slices.  Peel large leaves off the head of iceberg (this will be the “bun”).

Just assemble, and enjoy!  It will get messy, just a fair warning, but it WILL be delicious!
