Hi.  Hello.  Howdy.  It’s me, Emily.  Emily the author, the blogger on here.  The inconsistent blogger of Journey for Jessi.  I was doing so well guys, with the whole blogging on the regular thing.  Life happens though, the wheels fall off.  I was taking a vacation (I wish a real one with palm trees and sandy beaches and all…)  I am not going to lie and say things have been “super duper,” (see last post about honesty), but things have been getting better.  Okay, enough on that topic.  This post is meant to be a quickie recipe to get me back into the groove–I give you the paleo coconut cacao mug cake!

Before you say it, yes.  Yes, I am aware that cavemen didn’t have microwaves or access to all these ingredients and it isn’t really paleo…blah blah blah.  I needed something to pick me up.  Sue me.  It just so happens to be a quick cake made out of paleo ingredients.  I didn’t call it healthy.  I didn’t say, “eat this instead of that apple or carrot in your hand.”  All I am gonna say is, I wanted something sweet that felt like a treat, but I didn’t feel like going all out and indulging.  Trust me, if I wanted to indulge, you can bet I would’ve driven to the store and picked up some Oreos or a cupcake or macarón or something because I am an adult.  I have a car, money (debatable), and can make decisions.  Oh my gosh… I am ranting again.  OKAY.  Recipe.  Here it is:

Paleo Coconut Cacao Mug Cake

Ingredients:

  • 2 tbsp coconut flour*
  • 2 tbsp raw cacao powder
  • ½ tsp baking powder
  • egg
  • 2 tbsp coconut milk*
  • 2 tbsp coconut oil*
  • 2 tbsp honey
  • 1 tsp vanilla

(*um, yeah this isn’t low-fat)

  1. Mix all dry ingredients together in a bowl.  You can do this straight all in the mug, but it blends better in a bowl transferred to a mug.
  2. Add the wet ingredients to the bowl.
  3. Mix together well.
  4. Pour into a smooth-edged mug.
  5. Microwave for 2-3 minutes.
  6. Top with coconut shreds, chocolate chips, coconut whipped cream, honey, etc.
