catching up: march edition || Journey for Jessi

I am so sorry to all of my tremendous followers.  I have been no where to be seen on here on Journey for Jessi lately.  For those of you following my Instagram, you know I haven’t been completely missing in action.  You have seen so many tidbits lately that I owe it to you all (and myself) to fill in the pieces. stuffy sleepy and sick

stuffy sleepy and sick || Journey for JessiI admit it.  I was sick last week.  Despite ALL of my precautions and sanitary behavior the week before, like my uptake in vitamin C for example.  I guess it is difficult to fight a college community teeming with infection.  It did not turn out to be the flu, thank goodness, although Wednesday (at my worst) had me worried.  I am feeling way better now, though still runny nose, my lethargy and head congestion are fading.  So how did I beat this week?  Here are my tips to take care of myself while staying on a fitness program.

ski break

ski break || Journey for JessiLast weekend was a blast!  I went down to Winter Park for the weekend to go skiing–a typical pass time for the Colorado student I have discovered.  It was a nice break to exert some energy on the snowy mountains and be at one with nature and away from the crowded gym and college campus.  I love any type of vacation that involves a physical activity paired with it like skiing, surfing, hiking, biking, etc.  Although I did have a “cheat” weekend, I always made sure to keep everything in balance too.

sunday relaxation

sunday relaxation||Journey for JessiI cannot tell you how nice of a Sunday I had–okay well maybe I can.  It was a beautiful day!  Sunny skies, melting snow, warm temperatures…sigh.  It is glorious.  For breakfast, I had half a grapefruit sprinkled with stevia and cantaloupe with ¼ cup cashews (not pictured).  I always pair my fruit with a nut or fat of some sort to prevent drastic blood sugar spikes.

behind

behind--journeyforjessiLet me just apologize for being a bad blogger lately.  My October has been filled with all sorts of (vegan) food, festivities, fall, and lots of studying.  I know it is no excuse because blogging does not take that long, especially if I just pop a few recipes online (I have so many to post from Vegan Month). For now, I will do a recap/summary of my October, then I will begin posting recipes again.  I wish I had more workouts to post lately, but unfortunately, I have to admit I have fallen behind on my health and fitness since the summer.  I do not see this as a failure, though, just another opportunity to overcome a challenge. season switch up

Cucumber Ginger Lime Infused Water--Journey for JessiI absolutely love summer and everything about it, right down to the +100° and humid Texas weather.  Summer just makes me crave healthy and fresh foods like infused water (above: cucumber, ginger & lime), raw produce, and salads.  Can you say light and fit foods?  Yummy!  I am such a visual eater, and that aids in “eating the rainbow” to reap all the health benefits from a variety of fruits and veggies.
