Yup. That is chicken. Take away my label as a “pescatarian” or a “vegetarian that eats fish” or a “vegan who eats fish/eggs/honey” or whatever you once classified me as. The truth is, I was always bothered by those labels anyway because one word cannot define my diet—and my definition of the word diet, the way it should be used. Y’all, I could not be happier this morning! Can you just look at these Texas waffles? Pure heaven! I cannot tell you how excited I was that these turned out the way I had hoped! Yayayay! Rejoice with me! You can take the girl out of Texas, but not the Texas out of the girl y’all!
Christmas eve and Christmas this year were very different. I cannot think of a tradition that was followed to a tee this year. I guess that is what happens when you grow older and you are the youngest in the family. The Christmas season this year started out with a bang–maybe too much of a bang though, because my spirit slowly faded. I felt like Cindy Lou Who from the Grinch. On to the finale of my summer “vacation.” I say “vacation” because I was vacationing in the colorful state in which I attend school, Colorado. I am so blessed to call this amazing place my home away from home. The beauty and wonder never ceases to captivate me. On the final day in Glenwood Springs, my family and I went off the beaten path to a more than less popular hiking trail, but it did not disappoint by any means! It was full of gorgeous views of the river and falls and if it were not for the Grizzly Bear encounter (yes, GRIZZLY BEAR!!!), then we would have kept hiking the afternoon. Continue reading
Eggs. I used to despise the taste and texture of eggs. Slowly though, I have come to realize that the texture problem I had was because of the yolks, so I began to ditch those on most occasions, and the taste aspect? Who knew most restaurants (and sometimes my family) add milk and cheese into their scrambled eggs? No wonder I have a negative bias towards eggs, me being lactose intolerant and what not. No, eggs are not vegan (I do buy cage-free and free-range though), but they are packed with protein and have done me wonders this past week. Continue reading
As a pescatarian, I revel in the beauty that is the Portobello Mushroom. It is such a good vegetarian replacement for a burger patty or steak, and they are also great for stuffing or grilling! Last week, I had an amazing salad with roasted Portobello mushrooms, summer squash, and peppers at a restaurant. I wanted to try to recreate this salad, but my fridge was lacking in the vegetable department. The result though, was a Portobello Mushroom Salad, and it was delicious! Continue reading
